A luscious cheesecake featuring a silky cream cheese base swirled with fresh strawberry puree, perfect for any occasion.

  • 2 cups Graham cracker crumbs (or shortbread cookie crumbs)
  • 1/2 cup Melted butter
  • 1/4 cup Granulated sugar (for the crust)
  • 3 packages (8 oz each) Cream cheese, softened
  • 1 cup Granulated sugar (for the filling)
  • 1 cup Strawberry puree
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined.
  3. Press the crumb mixture into the bottom of the springform pan to create a firm crust.
  4. In a large bowl, beat softened cream cheese until smooth, then gradually add 1 cup of sugar.
  5. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
  6. Fold in the strawberry puree gently to create a marbled effect.
  7. Pour the cheesecake mixture over the crust and smooth the top.
  8. Bake for about 50-60 minutes until the center is set but still jiggles.
  9. Turn off the oven and crack the door, letting the cheesecake cool inside for about 1 hour.
  10. Refrigerate for at least 4 hours or overnight before serving.

Notes

For a lighter option, substitute low-fat cream cheese or Greek yogurt. You can also reduce sugar or use natural sweeteners.
