  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Sea salt flakes for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Mix in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Drop the dough onto the prepared baking sheet, leaving space between each cookie.
  8. Optional: Sprinkle sea salt flakes on top of each cookie.
  9. Bake for 10-12 minutes, or until edges are golden and centers are slightly soft.
  10. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze individual portions.
