A delightful breakfast casserole combining fluffy pancakes and savory sausage, perfect for family gatherings or brunch.

Ingredients

  • 2 cups pancake mix
  • 1.25 cups milk
  • 1 large egg
  • 0.5 tsp vanilla extract
  • 1 lb breakfast sausage, cooked and crumbled
  • 0.5 cup maple syrup
  • 0.5 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the pancake mix, milk, egg, and vanilla extract until smooth.
  3. Pour half of the pancake batter into the greased dish.
  4. Sprinkle the cooked and crumbled sausage over the batter.
  5. Drizzle maple syrup over the sausage layer.
  6. If desired, sprinkle shredded cheddar cheese over the sausage.
  7. Pour the remaining pancake batter over the top.
  8. Bake in the preheated oven for 25-30 minutes, or until golden brown and set.
  9. Let cool slightly before serving warm, with extra maple syrup on the side.

Notes

Can be prepared the night before and refrigerated overnight. Perfect for serving with fresh fruit or whipped cream.
