Easy No-Bake Strawberry Crunch Cheesecake

A delightful blend of creamy cheesecake and rich strawberry purée with a buttery crust, perfect for summer picnics.

  • 24 Golden Oreo cookies
  • 4 tablespoons salted butter, melted
  • 24 ounces (3 packages) cream cheese, room temperature
  • 2 cups powdered sugar
  • 2 teaspoons lemon juice
  • 1 cup fresh strawberries, puréed
  • 2 teaspoons vanilla extract
  • 1½ cups heavy whipping cream
  • 1 batch strawberry shortcake crumble

Instructions

  1. Crush the Golden Oreos in a food processor or Ziploc bag.
  2. Mix crushed Oreos with melted butter until combined.
  3. Prepare a 9-inch springform pan; press crust mixture into the bottom and sides.
  4. Chill the crust in the freezer.
  5. In a bowl, mix cream cheese, lemon juice, vanilla, and powdered sugar until smooth.
  6. In another bowl, whip heavy cream to stiff peaks.
  7. Gently fold whipped cream into the cream cheese mixture.
  8. Layer half of the cream cheese mixture with puréed strawberries.
  9. Pour the strawberry cheesecake mixture into the crust, then layer with remaining plain cheesecake mixture.
  10. Cover with plastic wrap and freeze for 4-5 hours or overnight.
  11. Top with strawberry shortcake crumble before serving.

Notes

For a lighter version, consider using low-fat cream cheese and a granulated sweetener.
