Instructions
Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
Cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
Beat in the egg and vanilla extract until well combined.
In another bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet mixture until just combined.
Divide the dough and color as desired with food coloring.
Scoop out portions of dough, roll into balls, and flatten slightly on the prepared baking sheets.
Bake for about 10-12 minutes, or until edges are lightly golden, then let cool on a wire rack.
For the buttercream, beat the softened butter until creamy, add powdered sugar, and mix until fluffy. Mix in vanilla and adjust cream for desired consistency.
Spread buttercream on the flat side of one cookie and sandwich with another cookie.
